This is a grilled Vietnamese rice paper dish that's layered with your choice of toppings. Very easy dish to make and it's pretty delicious! I had it for the first time while travelling in Vietnam.
Ingredients
- rice paper
- 1 egg
- 2 spring onions, thinly sliced
- small handful of chopped peanuts
- 1 cooked or smoked sausage, sliced
- 1 tbsp chilli crisps
- 1 tbsp mayonnaise
Directions
Begin by placing the rice paper onto a hot, dry cast iron pan.
- Toast for 1-2 minutes, then crack an egg over it and whisk quickly so the egg spreads evenly across the rice paper.
- Add the spring onions, peanuts, and sausage. Cook for an additional 2-3 minutes, aiming for the rice paper to become crispy and lightly toasted.
- Drizzle the chilli crisps and mayonnaise over the top, fold the rice paper in half, and serve immediately.
