Who doesn't love a good nachos? Especially when it has grilled corn, queso and seasoned beef.
Ingredients
- 1 bag corn chips
- 2 cobs grilled corn
- 1 red onion, thinly sliced
- 1 jalapeño chilli, thinly sliced
- queso cheese sauce (recipe below)
- 1 avocado
- 1 lemon
- 200ml sour cream
- tajín

cooked seasoned ground beef (recipe below)
- 50g (1.75 oz) butter
- 50g (1.75 oz) flour
- 500ml (2 cups) milk
- 200g (7 oz) low-moisture mozzarella, grated

200g (7 oz) red leicester cheese, grated
- 500g (1.1 lbs) ground beef
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp Tajín

Lay a portion of the corn chips on a tray and then layer with beef, queso, corn, onions, and chilli, repeat until all ingredients are used.
Top with guacamole (mix together the avocado, lemon, salt, pepper and Tajín) and sour cream, finishing with a sprinkle of Tajín!
Queso
Melt the butter in a saucepan.
- Once melted, add the flour and whisk until smooth.
- Gradually whisk in the cold milk, and when it starts to bubble, whisk in the cheese.
- Season with salt and pepper.
Beef
In a large frying pan, heat the olive oil and add the meat.
- Break the meat up well, then season it with all the spices.
- Cook for 4-5 minutes until fully cooked.
