Mashed potatoes are a staple in many homes, and there are lots of ways to cook them. Here is my recipe on how to cook great mashed potatoes at home.
Ingredients
- 8 medium King Edward potatoes, peeled and halved
- salt
- 200ml (7 fl oz) milk
- 2 sprigs of rosemary
- 2 cloves of garlic, crushed
- 60g (2 oz) butter
Directions
Place the peeled and halved potatoes in a large pot with cold water. Season with salt and cook over medium to medium-high heat until fork tender, about 25-30 minutes.
- While the potatoes are boiling, infuse the milk. In a separate saucepan, combine the milk, butter, rosemary, and crushed garlic. Warm over low heat for the duration of the potatoes' cooking time.
- Once the potatoes are tender, drain them and let them steam in the colander for a couple of minutes to remove excess water.
- Return the potatoes to the pot and mash them using a hand masher or potato ricer.
- Gradually add the infused milk to the mashed potatoes in two batches, stirring gently to incorporate without overworking.
- Serve with a couple of knobs of butter on top and some chopped chives if desired.
