It's BBQ season in Australia - here's how I make my grilled corn.
Ingredients
- 4 corn cobs, peeled
- olive oil spray for grilling
- mayonnaise for garnishing
- lime zest for garnishing
- tajin seasoning for garnishing
Directions
Bring a large pot of salted water to a boil. Blanch the peeled corn cobs for 5 minutes.
- After blanching, remove the corn cobs from the water. If you're preparing them in advance, let them cool down in the fridge. If you're ready to grill immediately, dry the cobs thoroughly and lightly spray them with olive oil.
- Preheat your grill to a high temperature. Place the corn cobs on the grill, turning them every 2-3 minutes, until they are nicely charred on the outside.
- Once grilled, remove the corn cobs from the grill. Garnish them with mayonnaise, lime zest, and a generous sprinkle of tajin seasoning.
