I love a fried chicken sandwich but sometimes I want something a little easier, quicker and slightly healthier, so here is my recipe for a delicious chicken sandwich (or chicken burger).
Ingredients
- 8 chicken thighs, boneless and skinless
- salt
- 2 tbsp peanut oil
- 10 dashes Maggi seasoning
- 6 dashes Worcestershire sauce
- 1 tbsp garlic powder
- 4 tbsp mayonnaise
- 1 tbsp chilli crisp
- 50g (1.75 oz) pickled red onions
- 1 avocado, sliced
- 8 rashers streaky bacon
- 4 burger buns
- 1 tbsp butter
- 1 head of Oakleaf lettuce, washed
Directions
Prep your chicken by trimming off any excess fat from the chicken thighs and butterfly them at the thickest point to ensure an even thickness.
- To marinate the chicken, in a bowl, mix together the peanut oil, Maggi seasoning, Worcestershire sauce, garlic powder, and a pinch of salt. Add the prepped chicken thighs, mix well, and leave to marinate in the fridge for 1 hour.
- To make the chilli crisp mayonnaise, mix together the mayonnaise and chilli crisp until well combined.
- Collect all your ingredients before you start grilling.
- Grill the chicken thighs over medium-high heat for 6–7 minutes on each side. Halfway through cooking, grill the bacon rashers until crispy.
- Once the chicken is ready, remove it from the grill and butter the buns. Toast the buns on the grill until golden on both sides.
- To assemble the sandwich, spread the chilli crisp mayonnaise on both sides of the bun. Add a layer of lettuce, followed by the grilled chicken, bacon, avocado slices, and finally, some pickled red onions.
- Top with the other half of the bun, and you’re good to go.
