Every dinner party needs a fresh, green salad to balance the protein and carbs. My green crush salad has green beans, snow peas and asparagus with a tasty dressing.
Ingredients
- 500g green beans, tops trimmed and cut in to 3’s
- 4 bunches asparagus, bottoms trimmed and cut into 3’s

300g snow peas, trimmed and cut in half

sunflower shoot (or pea shoots) to garnish
- juice of 2 lemons
- 1 teaspoon dijon mustard
- 1.5 teaspoons maple syrup or honey
- 100ml EVOO
- salt to taste
Directions
Blanch all the green veg in batches in boiling salted water until just cooked (2-3 min but make sure you check). Once they are cooked, plunge them into ice cold water to stop the cooking.
- Once all the veg is cooked and cold, drain well and pat dry.
- To make the dressing, add the lemon juice, mustard, maple, olive oil and a pinch of salt to a jar and shake well.
- To serve, place the dry veg into a bowl with the sunflower shoots and dress well with the dressing. Toss well and serve, add a few more shoots to the top for garnish.
