Ful medames is an Egyptian breakfast of cooked fava beans with spices, herbs and olive oil, boiled eggs and some tasty pita bread on the side to scoop it all up. Here is a ful medames recipe you can make at home.
Ingredients
- 800g (28oz) cooked fava beans
- 1 tbsp cumin
- salt to taste
- 1 brown onion, diced
- 1-2 green chillies
- 3 cloves of garlic
- 4 eggs, boiled to your liking
- 2 lemons
- 3 tbsp olive oil
- 2 diced tomatoes
- flatbread to serve
Directions
Place the cooked fava beans in a pan with approximately 200ml (about 7oz) of water. Add the cumin and a generous pinch of salt. Cook over medium-high heat for 15-20 minutes until tender, then mash the beans.
- Boil your eggs to your liking; I did mine for 7 minutes. Once cooked, peel and set aside.
- In a mortar and pestle, add the green chillies and garlic with a pinch of salt. Pound until you achieve a puree consistency. Transfer three-quarters of the diced onion to a bowl, along with the lemon juice, garlic and chilli paste, and olive oil. Mix well, then incorporate the mashed fava beans. Stir until evenly combined.
- To serve, place the bean mixture in a bowl. Garnish with the diced tomatoes, remaining onions, and boiled eggs. Serve with flatbread on the side.
