Chilli con carne, cheese and a hot dog - it's so good!
Ingredients
- 1 white onion, diced
- 2 jalapeños, diced
- 2 tbsp peanut oil
- 500g (1.1 lbs) beef mince
- salt and pepper, to taste
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 2 tbsp tomato paste
- 1 tbsp Vegemite
- 500ml (17 fl oz) beef stock
- 1 tbsp hot honey
- 300g (10.5 oz) red Leicester cheese, grated
- 6 hot dogs
- 6 hot dog buns
Directions
To make the chilli, start by heating the peanut oil in a large frying pan over high heat for 1-2 minutes. Add the beef mince and season well with salt and pepper. Flatten the mince to form an even layer in the pan to brown for 3-4 minutes. Then, add 3/4 of the diced onion and diced jalapeños, stir well. Next, add the spices, tomato paste, beef stock, and honey. Cook for 25 minutes on low heat, stirring often.
- To cook the hot dogs, place them in a frying pan over medium-high heat. Once they start to colour slightly, pour around a quarter cup (60ml) of hot water into the pan and immediately cover with a lid to steam the hot dogs through.
- Once the hot dogs are cooked, add your hot dog buns and about 2 tbsp of water to the pan to steam them, heating them all the way through.
- To assemble, place a hot dog in each bun, top with chilli, grated cheese, and the remaining diced white onion.
