Ingredients
- 12 chicken drumsticks
- 30g (1 oz) galangal, finely grated
- 20g (¾ oz) fresh turmeric, finely grated
- 45g (1½ oz) ginger, finely grated
- 3 cloves garlic, finely grated
- 2 bird’s eye chillies, finely diced
- 3 lime leaves, finely cut

juice and zest of 1 lemon (or lime)
- ½ tbsp brown sugar
- ½ tbsp fermented shrimp paste
- 1 tbsp peanut oil
- 1 tbsp fish sauce
- small pinch of salt
Directions
In a large bowl, mix all the ingredients together. Add the chicken drumsticks and ensure they are well coated in the marinade. Cover and leave in the fridge for 2 hours.
Preheat your grill to medium-high. Once hot, grill the chicken drumsticks for 16-20 minutes, turning every 2-3 minutes until they are nicely coloured and cooked through. Make sure you brush any remaining marinade onto the drumsticks.
Let the chicken rest for 10 minutes and then enjoy!
