Ingredients
- 800g (1¾ lbs) beef tenderloin, tri-tip, or sirloin, cut into bite-sized cubes
- 70ml (2½ fl oz) soy sauce
- 10ml (2 tsp) Worcestershire sauce
- 20ml (4 tsp) oyster sauce
- 1 tsp sugar
- ½ tsp black pepper
- 8 cloves garlic, minced
- 1 tbsp butter
- oil or tallow for cooking
- garlic rice, to serve
Directions
In a bowl, combine the beef cubes, soy sauce, Worcestershire sauce, oyster sauce, sugar, black pepper, and a pinch of salt. Mix thoroughly, cover, and marinate in the fridge for at least 20 minutes and up to 2 hours.
- While the beef marinates, mince the garlic or slice it finely.
- Heat a generous amount of oil in a wok or frying pan over low heat. Add the garlic and cook gently, stirring constantly, until golden brown. Strain the garlic, reserving the infused oil for cooking the beef or garlic fried rice.
- Tip: Double the amount of garlic if you plan to use it for both the beef and the rice.
- Return the wok to high heat and add 2–3 tablespoons of the reserved garlic oil. Add the marinated beef and stir-fry for 5–6 minutes, stirring frequently, until the beef is browned and cooked through.
- Stir in the fried garlic and butter, cooking for an additional 2–3 minutes until the butter melts and coats the beef evenly.
- Transfer the beef to a serving dish and serve hot with garlic fried rice.
