Crispy, golden tortilla stuffed with spiced beef, melted cheese, and a touch of capsicum. It’s pan-fried until crunchy and served with fresh pico de gallo for a zesty kick. Think of it as a toasted sandwich, but way better!

Ingredients
- 1 tbs extra virgin olive oil
- 1/2 red capsicum, diced
- 1/2 white onion, finely diced
- 2 cloves garlic, finely grated
- 200g beef mince
- 1 tsp each smoked paprika and ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- 100g grated cheese (mozzarella, Mexican cheddar)
- 3 flour tortillas
- 1 roma tomato, diced
- 1 jalapeno chilli, finely diced (deseeded optional)
- juice of 1 lime
Directions
Heat 2 tsp oil in a large frying pan on medium high.
- Cook capsicum, half the onion and garlic, tossing for 2-3 mins, until softened.
- Add mince, breaking up with the back of a wooden spoon. Cook for 3-4 mins, until browned.
- Stir in paprika, cumin, coriander and oregano. Cook for 1 min, until fragrant.
- Transfer beef mixture to a bowl and wipe out the pan.
- Add another tsp oil to the pan on medium heat. Add 1 tortilla, top with some of the mince and the cheese.
- Fold over tortilla to enclose and cook for 1-2 mins each side until dark golden brown and cheese is melted.
- Repeat with remaining tortillas and mixture.
- For the pico de gallo, combine tomato, chilli and lime juice in a small bowl. Season with salt.
- Serve tortillas cut into wedges with pico de gallo salsa and lime wedges.
