This spaghetti with prawns is a quick, no-fuss dish that feels a little bit fancy. Juicy prawns, garlicky olive oil, sweet cherry tomatoes, and a kick of chilli come together in a light, flavour-packed sauce. Tossed with perfectly al dente pasta and fresh parsley, perfect for a meal for one.

Ingredients
- 200g spaghetti
- 2 tbs extra virgin olive oil
- 2 garlic cloves, crushed
- ½ long red chilli, finely sliced
- 12 frozen prawns, peeled, deveined, thawed
- 10 cherry tomatoes, halved
- 1/4 cup finely chopped flat leaf parsley leaves
Directions
Bring a large saucepan of salted water to the boil.
- Cook spaghetti according to packet directions, until al dente.
- Meanwhile, place oil and garlic in a large frying pan. Heat on medium, allowing oil to infuse.
- Increase heat to high. Add prawns, chilli and tomatoes, tossing for 2-3 mins, until prawns are just cooked. Season with salt.
- Lift pasta from water straight into frying pan, along with 1/4 cup (60ml) of the cooking water.
- Toss well, until sauce is starting to stick to the pasta.
- Add parsley and toss through. Transfer to a serving plate.
- Garnish with some extra parsley and a drizzle of oil. Serve!
