Andy, take any leftovers from those braised ribs (if you've got any), shred them and make them into croquettes (not the bechamel based spanish ones. Just pass your sauce - veg and all - and add as much flour as needed. Mix just enough into the shredded meat to bind, watching for consistency. Pané and crumb and you're golden. They also freeze nicely).
