This is my take on a fattoush salad.
Ingredients
- 250g (8.8 oz) cherry tomatoes, cut in half
- 2 Lebanese cucumbers, diced to a similar size as the tomato halves
- 8 radishes, cut into sixths
- 1 red onion, sliced thin
- small bunch of flat-leaf parsley
- 2 tbsp red wine vinegar
- 4g (0.14 oz) salt
- 3 tbsp olive oil
- fresh ground black pepper
Directions
To make the dressing, simply combine the vinegar, olive oil, salt, and black pepper in a jar and shake well.
- In a large bowl, combine the tomatoes, cucumbers, radishes, red onion, and parsley.
- Pour the dressing over the salad ingredients in the bowl and toss well to combine everything, ensuring the ingredients are well-coated with the dressing.
