Braised endive is a simple side dish where halved endive is seared until golden, then gently cooked in chicken stock until tender. Finished with parmesan for a savoury kick.

Ingredients
- 3 endive (witlof)
- 1 tbsp extra virgin olive oil
- 200ml chicken stock
- grated parmesan to serve
Directions
Trim endive bases carefully, ensuring to keep leaves intact.
- Halve lengthways.
- Season with fine salt and set aside.
- Heat oil in a large frying pan over medium heat.
- Cook endive cut side down for 6-8 mins, until browned.
- Pour in stock and cover with a lid.
- Reduce heat to medium low and cook for 10 mins until well softened.
- Serve endive topped with some grated parmesan.
