A simple avocado toast, but with a little extra!
Ingredients
- Sourdough
- 1/2 avocado per slice
- 1 radish
- 2 sticks of purple sprouting broccoli
- 5g alfalfa
- 1 tbsp sunflower seeds
- 10g pecorino cheese
- 2 tbsp olive oil
Directions
Start by drizzling your sourdough in 1/2 of the olive oil on both sides.
- Toast either in a pan or under the grill of the oven.
- While your bread is toasting, blanch the broccoli in salted boiling water for 2 minutes and then plunge it into ice water.
- Toast the sunflower seeds in a pan and slice your radishes.
- Mash the avocado onto the toasted sourdough followed by the alfalfa.
- Next, add the sliced radish and the cold broccoli to the toast.
- Finish with a good season of sea salt, grated pecorino and a good drizzle of olive oil.
