Tomato Achar is a Nepali tomato chutney that's nice and spicy and goes well with momo. Here's how I make it.

Ingredients
- 5-10 dried chillies (more for increased spiciness)
- 5 tomatoes, diced
- 6 cloves garlic, crushed
- thumb-size piece of ginger, grated
- 1 bunch coriander roots, sliced
- salt, to taste
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp brown sugar
Directions
Start by adding one cup of water to a saucepan over medium heat. Add the dried chillies and simmer for 5-6 minutes or until they start to soften.
- Once the chillies are soft, add all the other ingredients to the pan. Cook over medium to low heat for 20-25 minutes, or until the tomatoes are soft and thoroughly cooked.
- Blend the mixture until smooth. Your chutney is now ready to be enjoyed!
