These zucchinis stuffed with rice, mince and herbs, and cooked in a tomato sauce are a great starter or side for your next dinner party.
Ingredients
- 1 cup basmati rice, washed and soaked in water for 30 mins
- 250g lamb mince
- 1 shallot, finely diced
- 50g soft butter
- 0.5 tsp allspice
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 1 tsp salt
- fresh black pepper
- 2 tbsp olive oil
- zest of a lemon
- small bunch parsley, finely sliced
- 1 tomato, cut into 5 and seeds removed
- 1 tin diced tomatoes
- 3 cloves garlic
- 6 zucchinis
Directions
In a large bowl, mix the lamb mince, drained and soaked rice, butter, spices, lemon zest, olive oil, parsley and season with salt and pepper.
- Take the zucchinis and cut the tops off, then scoop out the middle with an apple corer.
- Stuff each zucchini with the lamb and rice mix and fill the top with a piece of tomato.
- In a large pot add the diced tomatoes with the garlic and season with salt, bring to a light simmer.
- Place the stuffed zucchini into the tomato sauce and simmer on low heat for 1 hour.
- Remove and serve with some of the cooked tomatoes and some yogurt on top.
