Both my wife and I had late meetings yesterday, so she offered to get pizza. I told her no, I had plans to make this dish. She was delighted, not only because I was cooking, but also by the quality of the meal. The flavors were on spot, giving the meal a down-home comfort feel. We will certainly be adding this to our rotation of go-to meals when time is short, but we want some good and nourishing.

Nice recipes, definitely going to try them out. I am making something similar to chicken cacciatore, which I never new existed. I experimented with rizzoni and different kinds of meat, when I use beef I put red sauce, when I use chicken I am making a yellow "sauce" with curcuma. But in both recipes I pass the rizzoni through a pan with olive oil for a minute, that way I found out that it doesn't become muddy after it cools down. And my kids like it even the day after.

So this is a great dish. I did a red and orange capsicum as I did not have a yellow and green does not agree with me. Added just a pinch of dried tarragon as well while the potatoes were cooking. This was such a tasty and satisfying dish. This one will definitely be going into the make again category!
