Polenta is a great side dish and pairs really well with comfort-style protein like a roast or porchetta. It's quite easy to prepare but you do need to follow the right steps to make sure it's silky smooth. Here's my polenta recipe.
Ingredients
- 2.4 litres (about 2.5 quarts) of chicken stock
- 480g (approximately 17 oz) of polenta
- 60g (about 2 oz or 4 tablespoons) of butter
Directions
To prepare the polenta, pour the chicken stock into a pan with a lid and bring it to a simmer.
- Once simmering, gradually add the polenta while stirring continuously. Cook for 3-4 minutes on high heat. Then, reduce the heat to low, cover the pan loosely, and continue cooking. Stir the mixture every 5-10 minutes, allowing it to cook for a total of 40-45 minutes.
- After the polenta is fully cooked, turn off the heat and cover the pan. Let it sit for 5 minutes. Just before serving, stir in the butter until it's fully incorporated and the polenta has a creamy texture.
