A very easy pesto pasta to whip up during the week and serve alongside a roast chicken.


Ingredients
- 500g (17.6 oz) packet of Fusilli pasta, cooked and chilled
- 1 bunch of basil, leaves picked
- large handful of baby spinach
- zest and juice of 1 lemon
- 30g (1 oz) Parmesan cheese, finely grated
- 4 tbsp olive oil
- 4 tbsp water
- 1 punnet of cherry tomatoes, cut in half
- 200g (7 oz) Bambini Bocconcini, cut in half
- salt and pepper to taste
Directions
To make the pesto, blend together the basil leaves, baby spinach, lemon juice and zest, Parmesan, olive oil, and water until smooth.
- Pour the pesto over the cooked and chilled pasta. Add the cherry tomatoes and Bocconcini, then season with salt and pepper to taste.
- Mix well until all the pasta is evenly coated with the pesto and the tomatoes and Bocconcini are distributed throughout.
- Serve the pasta salad alongside a roast chicken.
