Who doesn't love pesto? Swirl it into pasta, spread it on sandwiches, or use it as a dip—this Italian classic makes everything taste fresher and brighter.
Ingredients
- 1 bunch basil, picked and washed
- 1 clove garlic
- 120ml (4 fl oz) olive oil
- 30g (1 oz) toasted pine nuts
- salt to taste
- 20g (0.7 oz) Parmesan, grated
Directions
In a tall jug, add the garlic clove, olive oil, and toasted pine nuts. Blend with an immersion blender until roughly combined.
- Next, add the basil, a pinch of salt, and the grated Parmesan. Pulse the mixture until it comes together, ensuring the pesto retains some texture. You don’t want it to be too smooth.
- If you don’t have an immersion blender, you can use a mortar and pestle or a stand blender to make the pesto.
