Yes, yes, yes! This fried chicken is the bomb. Juicy chicken, crispy outside and a little lick of spice.
Ingredients
- 1 chicken, cut into 10 pieces (each breast into 2, the 2 thighs, 2 drumsticks and 2 wings)
- Salt and pepper to taste
- 2 tbsp cayenne
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp brown sugar
- 200ml milk
- 2 eggs
- 2 tbsp hot sauce
- 250g flour
- Oil for frying
- White bread and dill pickles to serve
Directions
Start by seasoning the chicken pieces well on both sides. Place them into a container and in the fridge, covered for 3-4 hours.
- In a small bowl, mix together the cayenne, paprika, garlic powder and brown sugar and set aside.
- In a large pot or dutch oven, heat the oil to 180ºc.
- Place the flour in a bowl and in a second bowl add the milk, eggs and hot sauce. Whisk the eggs, hot sauce and milk together.
- Mix 2-3 tablespoons of the milk mixture into the flour mixture (this will make lots of nice crispy bits).
- Take the chicken and place it into the flour, then into the milk mixture and back into the flour, then onto a tray.
- Fry the chicken in the hot oil for 8-10 minutes or until golden brown.
- Check the internal temperature of the chicken. You are looking for 70ºc (if it's not 70ºc, but it has a good colour, then you can finish it in the oven if you need to).
- Pour 2 teaspoons of the hot oil into the dry spices mix from Step 2, and mix well.
- Brush the spice/oil mixture over the fried chicken and serve on white bread with pickles.
