Learn how to make flatbread at home and turn it into a simple, but tasty, sandwich with buffalo mozzarella, tomato and basil.
Ingredients
- 7g instant dry yeast
- 480ml warm water
- 25g olive oil plus extra for brushing
- 780g bread flour plus extra for dusting
- 10g honey
- 7g table salt
Directions
To make the dough, start by adding the warm water to a bowl with the yeast, honey, salt and olive oil and mix until the yeast and honey are dissolved.
- Add the flour and use a wooden spoon to mix until combined.
- Once the dough is a shaggy mess, remove it from the bowl and place it onto a floured surface and knead for 8-10 minutes or until smooth.
- Drizzle some oil in the bowl that you mixed the dough in originally, place the dough back in the bowl, cover it with a tea towel or cling film and leave it in a warm place to double in size. This will take around 1 hour.
- After the hour, turn the dough out onto a floured surface and knead all of the air out that has accumulated. Cut this into 12 even pieces then, using the palm of your hand, roll into tight balls.
- Roll each ball out to around 20-25 cm in diameter and cook immediately.
- You can either cook these in a pizza oven or if you don't have a pizza oven, a large cast iron pan in your kitchen oven set at 250°c works well also.
- They won't take long to cook in the pizza oven (they took about 60 seconds) but if you're using your kitchen oven they might take an extra 60 seconds.
- Once they're out of the oven, serve warm, filled with fresh mozzarella, tomato and basil or anything your heart desires!
