This stir-fried noodle dish is a great dinner option during the week as it's pretty cost-effective and very quick to make.
Ingredients
- 30ml (2 tbsp) peanut oil
- 5 peeled green prawns
- 1 Chinese sausage, sliced thin on an angle
- 2 garlic chives, cut into 3cm strips
- 1 egg, beaten
- 1 tbsp each of sweet soy sauce, oyster sauce, and light soy sauce, mixed together
- a small handful of bean sprouts
- 1 spring onion, sliced with greens and whites separated
- 1 portion fresh wide and fat rice noodles, zapped in the microwave and pulled apart
Directions
Prepare all ingredients in advance and place a wok over high heat.
- Heat the oil, then add the sausage. Cook for 2 minutes, then push to one side of the wok.
- Add the egg, which will cook quickly. Follow with the garlic chives, cooking them for 3 minutes. Then add the prawns and the white parts of the spring onion.
- Cook the prawns for 2 minutes before adding the noodles and bean sprouts. Stir frequently and cook for 3 minutes.
- Add the sauce around the edge of the wok and stir well to combine.
- Turn off the heat and add the green parts of the spring onion.
- Serve and enjoy!
