It's BBQ season here in Australia. Beef, capsicum and red onion skewers are a great addition to your family BBQ and they are very easy to cook up.
Ingredients
- 1.2 kg beef fillet, diced into 2 cm cubes (rump can also be used)
- 1 large green capsicum, diced
- 1 large yellow capsicum, diced
- 1 large red capsicum, diced
- 2 large red onions, diced
- 2 tbsp dark soy sauce
- 1.5 tbsp balsamic reduction
- 3 cloves of garlic, finely grated
- thumb-sized piece of ginger, finely grated
Directions
To assemble the skewers, start by threading 1 piece of capsicum, followed by a cube of beef. Add another piece of capsicum, then a piece of onion, and another piece of beef. Repeat this pattern until there are three pieces of beef on each skewer.
- For the glaze, mix together the soy sauce, balsamic reduction, ginger, and garlic in a bowl.
- Preheat your grill to a high temperature. Drizzle a little oil over the skewers and season them with salt. Grill the skewers for 2-3 minutes on each side. Halfway through the cooking process, start brushing the skewers with the glaze.
- The skewers should take a total of about 7-8 minutes to cook through.
